the correct matching SHOP MANUAL CAN BE VERY USEFUL
this is not a shop manual but it might be helpful
the OEM sensor and fans turn on at those higher temps
the higher temps are designed to lower emissions but you get better engine durability and power if you keep coolant below 195F and oil temps under 215F

swapping to a 180F T-stat certainly won't hurt drilling two air bleed holes may help coolant temp maintain consistency
and you can swap to a 190F sensor that turns on the fans earlier
