Theres several hundred different kits and each has its limitations and advantages

I was sitting in and driving my brother-in-laws cobra kit car recently,
its light weight, and even with a stock 302 ford its fairly quick for a street car, and it certainly gets attention where ever its driven, but its far too small
(at least in my case as the top of the windshield frame is directly in line with my eye level)
Im 6'3" and about 245 lbs so its a bit of a problem getting the access to the clutch, brake accelerator petals easily.
yes its a fun kit car, but I would have swapped a 427 or 477 BBC in it the first week I owned it.
yet you can,t ignore the fact the cobra kit cars fun to drive, its performance potential due to its light weight is substantial, and if you care.. its an attention magnet!

I think it might be a lot of fun to build a chaparral clone
