Gentlemen, I am pondering...

A simple mechanical throttle stop.
Keep the 4-bbl from opening fully.
 
The handling is Razor sharp.
Even sideways at 100 mph its easy to recover.
Dry pavement or wet during a heavy rainstorm.

Looks like you might have answered your own question, "I put too much blood and
sweat into it." If that's so, then have you put to much into it to sell the car??? Maybe
sell it to buy something that can be built with your kid's helps, making them part of
the process.

I am already finding that I am reluctant to let it go... beginning to miss it already. Worried that the C3 will not be fun to drive... (Big Block?)
And yer absolutely right: get kids involved...

Hmmmm... I kike the idea of a BB but... it seems to be a significant price jump.

Its done Drag Racing Bracket Racing still.
Throttle stops.
The best are made by DeadenBear Racing.
Used in Dirt track racing too throttle stops with New comer drivers unable to put down 500-900 hp all out race SBC on the dirt in a safe manner.

Easy to do with homemade cantilever throttle linkage rods & Aurora Heim joint rod ends.

Pontiac did the same on all 1967-69 Firebirds & Trans Ams with 400 HO & Ram Air.
Cut back on HP so the GTO was faster.
Firebird is lighter by 400-600 lbs.
Throttle stop was on the secondary Q-Jet baseplate linkage.
2-1/4" secondary throttle blades only opened 30-40 degrees instead of full 90 degrees.
The Clip was easily removed snapped off with pliers.
Then You had an NHRA Super Stock Racer with just drag slicks bolted on the rear.
