Going down in rear gearing

If I already have the rear out and on an engine stand changing the seals for the pinion and half-shafts, how difficult is it to install new gears for replacing the 3:36 to say - a 3:70 ratio?
Thinking ahead of the coming answer, if I brought this case while apart to a gear shop, what do you think it would cost if they did the switch?
 
btw that cam matched with 3.70 rear gears would work even better, but your probably looking at $700-$800 with both parts and labor once you HAND the differential to a skilled mechanic and youll need to reinstall it your self
