Id start with 7 quarts and have a buddy watch the oil pressure gauge when you make a series of hard launches and braking runs
personally I prefer a road racing oil pan matched to an acumulator and using a good windage screen and oil pan baffle design
keep in mind the object here is to run the maximum amount of oil that you can, while significantly reducing the spinning cranks effect on the oil draining into the baffled sump, if the crank can force air into the oil as its spinning it reduces the oils ability to cool and lubricate the bearings,
a proper windage screen can greatly reduce this potential issue.

personally, on a serious performance engine build,
I prefer a road racing oil pan with a wider sump and shallower multi baffled sump,as there's fewer ground clearance issues.
plenty of baffles and a windage tray , help with oil flow control under inertial loads, especially if matched to a 3-quart accumulator
and using a good windage screen and oil pan baffle design,
and Id certainly think about a good oil cooler,
yes its more complicated but it ensures constant oil pressure under many more stressful conditions.
be aware headers, and oil pan and oil filter clearances can be an issue with any non-stock config.
remember the oil level in the pan changes with engine rpms and inerial loads,
and theres generally 1-2 quarts,of oil in the upper engine,
cylinder heads, oil passages, valve covers and lifter gallery areas when the engines running
