Is there any advantage to bleeding the air from the capillary tube going to the
oil pressure gauge? Will the gauge react faster since there is no air to compress?

technically yes , but for all practical purposes the differences in the time lag are so small as to be almost meaningless
 

Kinda what I thought, plus it might actually smooth out the needle gyrations
and make it easier to read.

 
I bleed the line after the engine is running Rick.
Warmed up & idling fair.
 
There is no way am going to loosen that oil tube inside my car with it running at 35-40 psi.
Mine has a mix of air bubble and oil, and its very smooth, but i was wondering about it good question.
