I got under my 1984 corvette and found out one of my drive shaft U-joints , is obviously, on its last legs ,ok how difficult will this be? for me to replace, and what tools do I need!

you can do the job far faster and easier if you have a hydraulic press ,but the first step is to look up, and purchase the correct replacement u-joints.
it would be very helpful if you have a decent floor jack, 4 high strength jack stands, and a decent hydraulic press, but a good size vise and a few sockets could be used if nothing else is easily available.
