too much or too little fuel pressure?

Need advice.
I have a 1956 Chevy truck. The problem I'm having is every time I put the gas pedal to the floor the truck gets up and takes off. After I let off the gas the truck sputters and dies. I open the hood and look at the fuel pressure regulator it reads zero and won't pressure up. I have to go back to the gas line going to the tank and blow in the line and the fuel starts coming out. I can drive all over town all day as long as I keep my foot out of it but as soon as I give it hell it dies. The engine is a 383 stroker. I have a Holley blue fuel pump which is 10 inches from the gas tank out let and the pump is even with the bottom of tank. The gas lines are braided stainless steel that goes into a Holley fuel pressure regulator with a return lineback to tank. I have changed pump and regulator and inline fuel filter twice with no change. I've taking the tank out and checked it over. The tank is under bed. Any advice will help. I'm at my ends wit.
If your current fuel tank or fuel lines can,t keep up with the engines demands, can you remove the current plate and fittings and drill and soldier in a larger dual fuel fittings

and rev the engine a few times and watch the fuel pressure it should in theory remain in the 38 psi-42 psi range for most TPI and TUNED PORT efi

as with most problems its best to step back mentally, grab a few tools, a multi- meter, fuel pressure gauge, screw drivers a vacuum gauge etc.
swapping too and installing a new and decent quality fuel filter would eliminate that potential issue.(a clogged fuel filter)
but if your fuel pressure is falling to less than 2-3 psi it could starve the carb of fuel flow volume,If your truely seeing the fuel pressure fall, off to less than required, I suspect its a defective new fuel pump or the inlet to that fuel line in the tank, is getting plugged with crap,
but it might be a loose electrical connection or intermittent or high resistance, ground
that holley blue pump should easily provide 12 plus psi
as always, ISOLATE and TEST, never assume
and to realize everyone makes mistakes and every one learns eventually that a bit of time taken researching a problem can and usually does make solving the problem a great deal faster than blindly swapping parts or assuming you know the answer.
and yes you can access the problem, by testing each component part, and during that process, its solution, logically starts with not assuming you know the answers going in.. but rather to isolate and test the potential problem.
what material are the fuel lines, internally made of? could the fuel pump vacuum be collapsing the fuel line thus restricting fuel flow, you'll need a fuel pressure gauge on the carburetor of efi fuel rail too verify the consistent fuel pressure,as its feeding into the carb, or fuel rail,
how old are the fuel lines and what size are they?
what fuel filter are you using?
what fuel pressure regulator?
where are the feed and return and carb fuel feed lines connected?
and can you see the screen that is on the fuel tank feed inlet line.
electric fuel pumps generally provide at least 6 psi, but that holley pump can provide up too,
14 psi which would almost instantly flood the carb if the fuel pressure regulator does not limit the max pressure, or if the fuel pressure regulator or its connections are incorrectly installed , or if the fuel pressure regulator or its feed or return line is incorrectly connected.

if you used a diagram like this with some holley fuel pressure regulator its NOT hooked up correctly

the picture below is correct on many of the holley fuel pressure regulators
you need a fuel pressure gauge on the carb inlet port and then you need to rev the engine and hold it at 3500 rpm for a few second then drop the rpms and watch the pressure gauge DON,T ASSUME ,TEST VERIFY

you never mentioned having a fuel pressure gauge installed on the feed to the carb, or how your fuel system is set up, ID suspect your issue is the regulator ports are not connected correctly
