I'm thinking 36 ft deep x 75 ft wide and walls 14 ft tall to allow a couple 16 ft wide and 8 ft tall garage doors ,
as I find the current shop, I built in FLA,
while not ideal its about as close as my wallet will allow.
and clearance for a decent car lift, 200 amp service for an electrical panel,
so it will be rather similar to my current shop in Florida.
the only real changes from my current shop are minor changes in height,
(two foot shorter wall height) and ( the full shop floor at least 8" thick with 5000 psi rated concrete) as I found that the current shop is in most ways adequate
Id add two more 2500 cfm roof exhaust fans for a total of 4 roof vents vs the current two in the Florida shop.
and Id add surveillance cameras inside and outside on the shop in texas and add that to the house surveillance and alarm system similar to the existing florida shop security

I’m interested in seeing a price on this project. Are you going the concrete block route? With the way costs continue to rise, Steel trusses are getting pretty close and the new fire retardant roof sheathing and shingles will reduce insurance costs. Why the super-duper strength concrete? Isn’t that a bit overkill and very expensive?
 
its far less likely to be damaged in future weather related events and when I priced it out for my fla garage it was not that much more.
I guess Ill see once I get current quotes

If you did, that would make us pretty close to each other, depending on where in Texas of course !
 
You’re headed for a big sticker shock when you remember what you paid for materials back when built your big garage, And see what things cost now!
