I have a 1978 El Camino with a 350, Aluminum Corvette heads, dual Edelbrock 500s, headers, stock cam, side pipes. It is a dog right now and blows black soot out of the exhaust. If you punch it just falls on it's face, need to know how to make this engine better or should I just get a 383 stroker, I am looking for 500 HP plus, have to beat a 396 Chevelle!!

well, you always start at the basics before moving to the add ons, and the first thing thats rather obvious is that it needs a good tune up as black smoke usually indicates a very over rich fuel air ratio, youll need to set floats , and maybe change jets, and most likely the ignition advance is not correct, ID also strongly suggest you do a compression test and learn how to correctly set the valves and graph out the timing advance so you at lease know where your starting from, before making changes, Ive built lots of 450-500 plus hp sbc engines, but until you get down the basics of correctly tuning and adjusting an engine theres not much sense in trying to change parts.once you get the current combo correctly tuned you have a starting point to work from, and you might consider making life a bit easier by installing a single carb intake until you get the engine sorted out and correctly tuned.
Id also point out that you might want to think about factors like if the car needs to pass emission testing, if your going to use the car for transportation and what the cars rear gear ratio and transmission gearing are as all that will effect what engine can be used effectively
and I can be reasonably sure that if your running stock aluminum corvette heads, on a low compression 350 sbc and a stock cam on a 350 sbc with dual 500 cfm edelbrock carbs its not going to run worth crap
