Rebuilding Carburetors. How Is It Possible . . . . .?

To rebuild a carb and it works correctly afterwards when there are dozens of these “Guys” that rebuild your carburetor using a test engine set up and operational on an engine run stand. They run the carbs on the test engine and test for cold fast idle, hot idle, idle mixture, no-load throttle response, light-load cruise, secondary operation, and light-load mixture. Most have a LM-1 air/fuel meter on the test stand, and can assure proper metering at idle and under high rpm no-load. Some guys will install your carb on a car and test for load conditions or WOT performance.

I can’t do this, how many can? Even for a half decent automotive enthusiast - (like I think most are on the better forums) when not able to perform testing as described above, I would think there are many rebuilds done to sub satisfactory results afterwards.
 
So many guys (actually a shitload) say constantly that there’s no replacement for a good tuned Quadrajet
 
Besides, I have some modifications done and planned to be done increasing the hp and torque. I’m not too sure about how 600 cfm will be from those replacement carbs. Spread bore to square bore? I do not want to have to buy another intake, not for this car! Not crazy about any adapter either and I really don’t want another car part on my shelf.
