most of us learn by making mistakes, I know I make my fair share, over 6 decades,

as always you start by testing and eliminating the potential causes
where are you reading that 50psi oil pressure from? Port location you use on the block?
what oil Filter are you using?
did you install a high volume oil pump?
what oil filter" Id suggest the longest WIX that fits the application
and yeah I know you thought you checked, but the oil pickup to oil pan floor clearance is CRITICAL, if its under 1/4" you get that issue
Id certainly drain the oil and use a cell phone probe cable to inspect the pick-up to oil pan floor clearance, I had a friend with similar issues on a 1965 chevelle and after testing it turned out that the new high capacity oil pan he had installed with the new high volume oil pump got installed and some where in the process the oil pan had cracked the oil pump pick-up during the install as it was barely installed in the pump.
I ran into a case years ago where the owner of a car had low oil pressure we pulled the pan and found he had used a ton of silicone on the oil pan gasket during the install and a great deal of it squeezed out, clogging 90% of the oil pump pick-up screen

there's two ways ,...... you can use the correct tool, which is ADVISABLE! use this oil pump(link below) in most stock SBC builds, as it produces a 10% increase in oil volume and standard pressure which is just fine , but obviously check your bearing clearances and oil pump to oil pan floor...
